Aspie Recipes: Happy Pi Day; Now Make A Caramel Pecan Pie

I hope you all enjoyed Pi Day today!  To honor that unique symbol that starts with 3.14 and goes to infinity.  I decided to make a pie!  Many southerners love pecan pies.  It just makes sense because the south has numerous pecan trees.  Why not kick up the pecan pie and make it sweeter.  The caramel makes this pie a hit!  Here’s what you need!

  • 1 (9 inch) unbaked pie crust
  • 36 individually wrapped caramels
  • 1/4 cup (half stick) butter
  • 1/4 cup milk
  • 1/2 cup sugar
  • 3 eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup pecan halves

1.  Use a pie crust and place on the bottom of the pie pan.

2. Preheat oven to 350 degrees. Unwrap the 36 wrapped caramels.  Add the caramels, butter, and milk into a sauce pan, melt and combine over low heat.

3. In a large bowl, combine sugar, eggs, vanilla and salt.

4. Gradually mix in the melted caramel mixture.

5. Stir in pecans and mix well!

6. Pour filling into unbaked pie crust.  Bake in 350 degree oven for 45-50 minutes.

7. After pulling out of oven, let cool.

There you have it!  I hope you celebrate the end of Pi Day with a pie!
