Aspie Recipes: Making An Ice Cream Cake

 

Today is my birthday and I turned 26.  And I love making recipes and sharing them on Geek Alabama.  So instead of going to the store to buy a generic birthday cake with that sugary icing.  I decided to make my own cake with ice cream in the middle.  I used yellow cake and three types of icing!  To start you need to make the yellow cake and here is what you need.

Yellow Cake Recipe 

  • 1 cup butter
  • 1 1/2 cups sugar
  • 8 egg yolks
  • 3/4 cup milk
  • 1 1/2 teaspoons vanilla extract
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Cream together the butter and sugar.  Preheat the oven to 350 degrees.

Add the egg yolks one at the time.  Then add vanilla, milk, flour, baking powder, and salt and mix well.  (I saved the egg whites for breakfast.)

Pour batter into a greased pan.  I used a glass pan because that’s all I had.  Bake in oven for 30-40 minutes.  Then check middle to see if it’s done.

Let cake cool down and set aside.

Now on to making the frosting.  I made three types of frosting in this recipe.  Of course you could use only one on a cake.  The first frosting was a caramel frosting.

Caramel Frosting

In a saucepan bring the brown sugar and whipping cream to a boil.

After bringing to a boil, add baking soda and let boil for one minute.  Then add butter and remove from boil.  Let cool!

Buttercream Frosting

  • 1/4 cup butter
  • 2 cups confectioners sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Mix all ingredients well together.

Chocolate Fudge Frosting

  • 1/2 cup butter
  • 1 cup chocolate chips
  • 1 pound confectioners sugar
  • 1/2 teaspoon vanilla extract
  • 3/4 cup milk

Melt chocolate chips over low heat in a saucepan.  Then combine all ingredients in a bowl and mix well.

Now that you have everything completed here comes the fun part!  I used cookies & cream ice cream in the middle but you can use any ice cream you want.  First you need to cut in half the yellow cake and place one on the bottom.  I layered the bottom cake with the caramel frosting and I then added the layer of the cookies & cream ice cream.  (let the ice cream soften)

Then I added the other layer of the yellow cake.

Then I added a layer of the buttercream frosting.

Then I added the final layer of the Chocolate Fudge Frosting.  Then put the cake in the freezer for a few hours to let everything get hard.

You have to admit this looks very good!  Enjoy making!
