Making Homemade Thin Mint Cookies

One of my favorite Girl Scout cookies is the Thin Mints!  I always get a couple of boxes when they go on sale every year.  But for the other eleven months; I get that craving for them every once in a while.  So I decided to make some homemade thin mint cookies.  You are going to like these!  Here’s what you need:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 14 Andes mints
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup butter

1. In a large bowl, beat 1/2 cup softened butter until creamy.  Then add the sugar and egg and mix well!

2. Sift flour, cocoa powder, and salt together in another bowl.

3. Add flour mixture into butter mixture by halves.  Mix well after each addition.

4. Melt the 14 Andes mints in the microwave for around 30 seconds to one minute.  Then add the melted mints to mixture.

5. Divide dough in half.  Then knead dough on a lightly floured surface.

6. Roll dough into two 1 1/2 inch diameter cylinders.  Wrap each cylinder in wax paper and refrigerate for five hours.

7. Preheat oven to 350 degrees.  Slice 1/4 inch thick pieces with a sharp knife.

8.  Place pieces onto a cookie sheet and bake for around 10-12 minutes.  At the same time, melt 1/4 cup butter and chocolate chips in a double boiler or in a microwave.

9. Layer melted chocolate on top of each cookie!

10.  Refrigerate cookies for 1-2 hours so chocolate can harden.

Triple Chocolate Chunk Muffins

Show of hands people; how many of you really loves chocolate?  How many of you has to have some chocolate every day?  This recipe uses plenty of chocolate to satisfy your chocolate craving.  So what are you waiting for?  Here’s what you need.

  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/4 cups milk
  • 1 teaspoon vanilla extract
  • 6 tablespoons butter (3/4 stick)
  • 2 large eggs
  • 1 1/2 cups semi-sweet chocolate chips

1. Combine flour, cocoa powder, sugar, baking powder, salt, baking soda, and 1 cup of chocolate chips in a large bowl.  Mix ingredients together and preheat oven to 375 degrees.

2. Combine milk, vanilla extract, melted butter, and 2 eggs in another bowl.

3. Pour the liquid ingredients over the dry ingredients and, with the whisk or a rubber spatula, gently but quickly stir to blend.  Do not overmix the batter!

4. Using a muffin pan and paper muffin cups, place an even amount of batter into each cup.

5. Place muffin pan into oven and bake for around 20 minutes.  Check the middle with a toothpick to make sure they are done!  Let muffins cool completely!

6. Put 1/2 cup of chocolate chips into a bowl and microwave for one minute to melt.

7. Top each cooled muffin with some melted chocolate.

8. Place muffins into fridge so the melted chocolate can harden.

There you have it!  Grab a couple of muffins and a glass of milk and dig right in!  I think you are going to enjoy these!

Chocolate Cake In A Coffee Cup

My first ever recipe using a coffee cup was popular!  Brownie In A Coffee Cup drew a lot of traffic and the people liked it!  You can view it by clicking the link.

For this coffee cup recipe.  Nobody can go wrong with chocolate cake!  This chocolate cake recipe has no eggs.  But you will still enjoy lots of chocolate flavor.  Here is what you need.

  • 3 tablespoons flour
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 2 teaspoons cocoa powder
  • 2 teaspoons oil
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • Chocolate Syrup
  • Ice Cream
  • Coffee Mug

1. Combine all ingredients except ice cream into a coffee mug.

2. Mix ingredients together thoroughly!

3. Microwave for 2 minutes.  Do not overcook!

4. Take out of microwave and add chocolate syrup.

Brownie In A Coffee Cup


First I wanted to show off my new logo for A Guy’s Cuisine which I designed myself!  I think this logo looks great!  And sorry Alabama fans; I am an Auburn fan and used a Auburn coffee cup!

So for my first recipe with the new logo I decided to make something yummy!  I saw something online where you can make a brownie in a coffee cup.  I thought this was something that could not be done.  But after I tried it I became a believer!  With the weather getting cooler nothing is better than a warm brownie!  Here is what you need:

  • 1/4 cup flour
  • 1/4 cup sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons oil
  • 3 tablespoons water
  • pinch of salt
  • ice cream
  • coffee mug

1.  Combine all ingredients except ice cream into a coffee mug.

2.  Mix ingredients together thoroughly!

3. Microwave for 1 minute and 40 seconds.  Do not overcook!

4.  Take out of microwave and top with ice cream and enjoy!

This recipe is so easy anyone can do it.  And I have created a nice infographic where you can print out and stick anywhere.  Believe me; you will want to print this off because you will fall in love with brownies in a coffee cup!

Chocolate Covered Frozen Oranges


This recipe is very simple to do.  When it’s hot outside you want to enjoy something cold.  So why not try frozen orange slices.  Get Naval Oranges which are seedless and pop them in the freezer for a few hours.  Then you can enjoy a frozen treat.  But when you add some chocolate these are delicious.  Here’s what you need.

1.  Take your Naval Oranges and peel them.

2.  Pour A bag of chocolate chips into saucepan and melt.

3.  Dip each orange slice into chocolate.  Then put onto cookie sheet layered with wax paper.

4.  Put the cookie sheet into freezer and freeze for 2-3 hours.

These are very good and I hope you enjoy them!

New Way of Making S’mores


Today I got some stuff to make a summer-time staple.  Everyone enjoys making s’mores in the kitchen or out by a campfire.  And yes I even enjoy them to.  S’mores only needs three ingredients and takes around a minute to make.

Put a marshmallow on top of a graham cracker.  Put it in the microwave for around 15 seconds or until they puff up like below.

Then put a piece of chocolate on top of the warm marshmallow.  Let it melt!

Then put another graham cracker on top and enjoy!  Your classic s’mores.

But you knew I had to also shake up the classic s’more.  So I decided to combine the classic s’more by adding bananas and peanut butter.  If Elvis knew there was a recipe for this he would thank me!

Begin by cutting four pieces of banana.

Then put a layer of peanut butter on one side of the graham cracker.

Then put the bananas on top of the peanut butter.

Then melt the marshmallows and put a piece of chocolate on top.  Then combine the two sides to make one great s’more.

There you are!  A great twist to the classic s’more.  In fact I am enjoying these right now while I am writing this post and they are very good.  Enjoy these!

 

Some Awesome Videos


Normally I only feature videos during my weekly Video Roundup Post.  But these two videos had to be shared now!  This first one called Issac’s Live Lip-Dub Proposal has the girlfriend sitting in the back of a Honda CR-V while wearing headphones.  While she hears the song from Bruno Mars called Marry You she watches an awesome collagraphed dance from many people.  And she said yes!

This second video had a group of guys drive to Venice Beach and bury a treasure chest filled with gold coins in the middle of the night.  The next day the guys dig up the treasure chest and everyone is very shocked!  But sadly for everyone the gold coins were actually chocolate!  This was a great prank!

Strawberry Chocolate Shortcake


Since strawberries are in season right now.  I wanted to try something that I knew would taste good.  So with some simple ingredients you can make this too.  And try this after it has been chilled in the fridge.  I think it tastes better after getting cold.  So here’s what you need!

  • 2 cups all-purpose flour
  • 1/3 cup white sugar
  • 1/4 cup cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 2 cups milk
  • 2 pints strawberries, sliced
  • 1/4 cup white sugar
  • 1 (12 ounce) container frozen whipped topping, thawed
  • 2 tablespoons chocolate syrup

1.  Grease two 9-inch cake pans and preheat oven to 400 degrees.

2.  In a mixing bowl; combine flour, 1/3 cup sugar, cocoa powder, baking powder, baking soda, and salt.  Cut in butter until mixture resembles coarse crumbs.  Then add in 2 cups milk mixing until moistened.  Then spread batter into the two cake pans.  Bake for 15 minutes and insert toothpick to make sure center comes out clean.

3.  Cut strawberries in half and put into bowl.  Add 1/4 cup sugar and mix well.  Then let sit for 10 minutes.

4.  Combine 2 tablespoons chocolate syrup into container of whipped topping.  Then layer half of whipped topping with half of strawberries on top of one shortcake.  Then do the same thing with the second layer.

5.  Put in fridge and enjoy!

Mint Chocolate Brownies


This time I decided to make some brownies from a great recipe I found online.  But I added a twist.  I put in some mints to give it a great taste.  And I also doubled the original recipe because I only have a big pan.  Here’s what you need.

  • 1 cup melted butter (2 sticks)
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 1 cup all-purpose flour
  • 2/3 cups unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Andes baking chips
1. Mix all of the ingredients together.  Preheat oven to 350 degrees and grease pan.

2. Pour in one cup of Andes mint baking chips.

3.  Pour mixture into pan and bake for 30-40 minutes.  Check middle with knife to see if it’s done.

4.  After done baking; enjoy!

Great Chocolate Pie


So after the strawberry pie I made last time I came up with a challenge to come up with a pie that was better than the store bought Whole Foods chocolate pie that did not taste very good.  The filling was made from scratch while the pie crust was store bought.  The first step is to bake the pie crust in the pie pan.  Follow the instructions on the box.

Then you need to cook the filling.  Here is what you need.

  • 3 egg yolks, beaten
  • 1 1/2 cups white sugar
  • 4 tablespoons cornstarch
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 3 cups milk
  • 1 tablespoon butter
  • 1 1/2 teaspoons vanilla extract

1. In a large pan; combine everything except for the butter and vanilla.

2. Bring the mixture to a boil and take off heat while stirring constantly.

3. Pour mixture into baked pie crusts.  Then let cool and chill in fridge.

4.  Put on top some whipped cream and enjoy!

Enjoy this pie.  This will beat any store-bought pie any day!
