Aspie Recipes: Apple Cinnamon Muffins

It’s Fall and that means its apple season!  This is the season Applejack looks forward too every year.  Am I right ladies and gentlemen?

So for this recipe post, I took fresh apples and combined them with some cinnamon to make some wonderful muffins!  I have already had some and they are wonderful!  Here’s what you need for the muffins.

  • 1 1/2 cups all-purpose flour
  • 1/3 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup oil
  • 1/2 cup milk
  • 2 apples that are peeled, cored, and finely chopped
  • 4 tablespoons (1/4 cup) butter, melted

For the topping.

  • 1/2 teaspoon ground cinnamon
  • 1/3 cup chopped pecans
  • 1/4 cup packed brown sugar

1.  Combine the flour, brown sugar, baking powder, cinnamon, and salt in a bowl.  Combine the oil, milk, and melted butter into another bowl.  Preheat oven to 375 degrees.

2. Take your two apples and peel them, take the cores out, and finely chop them!

3.  Combine the wet and dry ingredients together.  Then add in the chopped apples into your mix and stir well!

4. Take mixture and evenly divide between 12 muffin tins.  Then place in oven for 15-20 minutes.

5. Combine cinnamon, pecans, and brown sugar in a bowl and mix together.  After taking the muffins out of oven, let them cool completely!

6. Sprinkle topping onto the top of the muffins.
